This Chicken Cordon Bleu Casserole is a quick and easy way to enjoy the delicious flavours of chicken cordon bleu but in the form of a casserole dish. Chicken and diced ham are stirred into cooked pasta and coated in a rich creamy white sauce then topped with swiss cheese to create a supper that takes little effort but tastes incredible. This dish also freezes well so you can even make a second one to store in the freezer for another day.

Can I say it? Spring is finally here! Yeah!! Waaaaait a minute. Now comes all the work. I’ve been mentally making a list of all the projects I’d like to do around the yard and now is the time to execute all those ideas. There just seems to be way more projects then hours in a day however. Where to start…

My flower gardens have been sadly neglected over the past few years and I’d really like to remedy that this year. I’ve been searching through Pinterest (obviously) and trying to research different shrubs and flowers. My problem is the house I bought. It’s positioned all wrong and my flower gardens are in horrible locations and I don’t get enough sunshine during the day to grow what I want and, and… breath… it’s not like a person decides to buy a house based on the direction of the windows or where the gardens are located on the property. However, when I (hopefully) build my own home, or have a larger property, I will be considering all these factors.

Everything takes time. And money. And a lot of effort. They say Rome wasn’t built in a day so I’m giving myself a bit of time to work on these projects around my home and hopefully enjoy the process. Do you have any projects planned for this summer?

When I know I have a busy day ahead of me I love throwing this easy Chicken Cordon Bleu Casserole together first thing in the morning so I don’t have to worry about what I’m going to make for supper later on in the day. It will only take a moment for me to turn the oven on and put the casserole in to warm up. Usually by dinner time I’m so exhausted we end up ordering take out.

I love how I can also use leftover chicken into this Chicken Cordon Bleu Casserole instead of having to cook up chicken breasts. It’s so delicious. The meal also makes enough that you could fill lunch pails with leftovers. How’s that for stretching a buck?! Because, you know… I have a lot of yard projects and those cost money.

Ingredients

  • 2tablespoonsolive oil, divided
  • 2skinless, boneless chicken breasts, cubed 1”
  • 1teaspoonminced garlic
  • 1(10.75 ounce) can condensed cream of chicken soup
  • 1cuphalf and half
  • 1/2teaspoonsalt
  • 1/4teaspoonpepper
  • 1/2cupparmesan cheese, grated
  • 450gpasta (rigatoni)
  • 150gham (lunch meat)
  • 6slicesSwiss cheese

Instructions

  1. Preheat the oven to 350 degrees F. Grease a casserole dish and set aside.

  2. Heat 1 tablespoon of olive oil in a large frying pan. Add the cubed chicken breasts to the hot pan. Brown the chicken until cooked completely through.

  3. While the chicken is cooking, bring a large pot of water to a boil and cook the pasta until the pasta is just about ready. It will still have a bite to it. Drain and set aside.

  4. When the chicken is cooked, remove it from the pan and set aside.

  5. Add another tablespoon to the pan and heat. Add the garlic and cook for about 30 seconds. Stir in the cream of chicken soup and half & half. Whisk until well incorporated. Add the salt and pepper.

  6. Remove from the heat and stir in the parmesan cheese and cooked chicken.

  7. Dice the ham into small bites. Combine the pasta, chicken and sauce and diced ham. Stir to thoroughly cover the pasta with the sauce. Transfer the pasta mixture to the prepared casserole dish. Arrange the slices of Swiss cheese on top of the pasta.

  8. Bake in the oven for about 20 minutes until the cheese is melted and bubbling.
