In my polish family kolochkys are pastries with fruit or cheese filling like a small cookie. You can see the filling.

West is the name of a city north of where I live. They have a well known bakery that makes kolochkys. In fact that is mostly what they sell and they have many flavors. Most have a sweet filling. Some have fruit and cream cheese combined. They are heavenly.
But some of their kolochkys do have sausage. The sausage is the bigger kind that is made in casing like you might serve at lunch or dinner. They are similar to pigs in a blanket but I think of those as ones using breakfast sausage links that are smaller.

Like most foods in America many come from other cultures. But then we create our own spin on them. What is served here is probably different from true Polish kolochkys.
1956BD is right, but I think most "Texans" consider kolaches to be more like a pig in the blanket in a certain type of pastry. West, Texas is definitely the "mecca" of kolaches and requires a stop anytime we drive through (rarely).
I'm from East Texas and if you order a kolache at a donut shop, it'll have sausage. I think that's what Bucee's sells too. My brother lives in Lexington, KY now and is always on the lookout for "kolaches".
