Wedding cake to keep for a christening - CakeFlix (2024)

I have just celebrated my nieces wedding and made my first ever wedding cake. Phew!!! All went well so a very happy day and a relief for me.
She wants to keep the top tiered fruit cake for a christening. How long can you keep a fruit cake which I made in March and have been feeding it with brandy, before I covered it in marzipan and icing.
Also what is the best way to store cake as could be up to two years before being used?

Fruit cakes can be stored for years as long as they are stored properly, they can also be frozen for a very long time. If not freezing wrap the cake up in several layers of either brown paper or parchment, then several layers of foil and store in an airtight tin in a cool place. After two years the cake will probably need re-icing. If freezing it’s best to remove the icing before hand. Wrap in the same way as for dry storing.
I kept the top tier of my royal iced wedding cake for my son’s Christening for almost two years. It was stored in a cake/sweet tin and placed in what used to be the old fashioned larder. The icing cracked and became crumbly but the cake was good. Approximately four weeks before the Christening the cake was stripped of the old marzipan and icing, fed warmed brandy and stored in a cool place before being re- decorated. Always turn the cake over after each feed to ensure even distribution of feed and also to ensure consistent moistening.
I haven’t frozen rich fruit cake for any length of time so hoping other members will chip in with with their experience.
